Gregorio Fernández is the driving force behind the enduring success and evolution of La Aquarela. For more than 35 years, he has devoted himself to shaping the restaurant into one of Gran Canaria’s most distinguished fine dining destinations, guided by an unwavering commitment to excellence.

As owner, he continues to uphold the values that have defined La Aquarela from the very beginning: uncompromising quality, consistency, and a relentless pursuit of continuous improvement. His vision is simple yet demanding to create an exceptional dining experience that inspires guests to return time and again.

Throughout its history, La Aquarela has welcomed an outstanding succession of acclaimed Spanish and French chefs, alongside an exceptional front of house and wine team. The restaurant has been supported by sommeliers whose careers include three-Michelin-star establishments, as well as maîtres d’hôtel of internationally recognised standing. This remarkable concentration of talent has shaped La Aquarela’s distinctive identity, where refined cuisine, impeccable service, and an exceptional wine programme come together in perfect harmony.

Many chefs who have been part of La Aquarela have gone on to establish acclaimed restaurants of their own, earning Michelin stars and international recognition reflecting the restaurant’s longstanding culture of excellence and professional development.

Today, Gregorio Fernández continues to lead La Aquarela with the same passion that has defined his journey for more than three decades, ensuring that every detail reflects the restaurant’s enduring commitment to hospitality, craftsmanship, and gastronomic excellence.

Maitre Head sommelier

He has studied in the best training centers in Spain and Europe. In 2009, he celebrated 17 years in the sector and continued his career in the famous Restaurante La Aquarela.

Throughout his career, he has received prestigious awards, including Best Maitre of the Canary Islands and Best Wine List. In addition, he holds the title of Ambassador of Canary Islands Wine, promoting and showcasing the region´s rich winemaking heritage.

In 2026, he was recognized as one of the Top 100 Sommeliers in Spain by Sommelier Edit, further establishing his position as one of the leading figures in the Spanish gastronomic and wine scene.
